The best brownies of your life

Dark brown sugar has more molasses and has a rich flavor) – 1 cup all-purpose white flour (don’t use gluten free flour, it will change the texture) – 1 tablespoon espresso powder (you can use decaff) – 1/2 teaspoon cinnamon powder – 6 large eggs – 2 teaspoons vanilla extract – 1 teaspoon fine sea salt – Flaky sea salt, for sprinkling , then line with baking paper (or parchment paper) Chop the chocolate and combine it with ¼ cup of cocoa powder, 1tbsp espresso powder and 1/2 tsp cinnamon powder in a liquid measuring cup (needs to be heatproof) or medium bowl. Remove the baking pan from the oven, then lightly drop the pan on a flat surface 1-2 times until the brownies deflate and crack. Sprinkle with flaky sea salt (or don’t if you don’t like the taste) Return the pan to the oven and bake for about 15 minutes more

Vegetables Tray Bake with Tahini (Vegan)

3 Zucchinis, medium size (sliced) – 1 red Onion (peeled and sliced – half moon) – 3 cups brown mushrooms (cut in half) – 500g chickpeas (cooked and drained, or canned and drained) – Cut the mushrooms in half, put a drizzle (1 tablespoon) of olive oil in a pan and fry them for 2 mins on medium heat. – Put all the above in a big bowl, drizzle with (2 tablespoons) olive oil, cumin, salt and pepper and mix well with your hands.
