Makes your house smell incredible, the texture is perfect… this is that type of recipe where I can’t believe it’s gluten-free, never mind low-carb, completely grain-free AND low in sugar. Make sure to save this post, and let me know if you try it! 🥰 Low-Carb Zucchini Bread Makes one standard 8x4 loaf Cut into 10 slices, per slice: 170 calories 12g F / 7g C (net) / 5g P / 8g fiber / 1g sugar 1 cup blanched almond flour 1/2 cup cassava flour (or all purpose flour) 1/2 cup granulated sweetener (I used allulose) 1 tsp baking powder 1/2 tsp baking soda 1/2 tsp salt 1 1/2 tsp cinnamon 3 large eggs 1/4 cup butter, ghee or coconut oil, melted 1/4 cup maple syrup or sugar free syrup 2 tsp vanilla extract 1 med-large zucchini, shredded (about 2 cups) 1/2 cup sugar-free chocolate chips (optional) 1. Preheat oven to 350 and line an 8x4-inch glass loaf pan with parchment paper. 2. Combine all dry ingredients in a mixing bowl. 3. In a separate bowl, whisk together eggs, butter, syrup, and vanilla. Add dry into wet, and stir to combine. 4. Gently fold shredded zucchini into the batter. Fold in chocolate chips if using. 5. Low-Carb PEANUT BUTTER CUP CREPES! 🍫🥜🥞 Chocolate crepes filled with a high-protein peanut butter cream filling and chopped peanut butter cups! 12g of protein and only 3g net carbs. Keto Frosted Animal Cookies

If you never tried those popular animal cookie snacks as a child, it’s not too late, and this recipe is the perfect way to introduce the delicious sweet snack into your life. I recommend using small animal shaped cookie cutters for these, approximately 2-inches wide by 1-inch tall. After cutting out the cookies and placing them on a parchment lined cookie sheet, the dough will have warmed up a bit, so I recommend placing the cookie sheet in the freezer for a few minutes to make the dough cold again. For the frosting, I used Lily’s Sweets new sugar-free white chocolate chips.
