Ingredients: •2 cups GF flour • 2 tbsp. matcha powder • 2 ½ tsp baking powder • 1/4 tsp salt • 1 cup cane sugar * • 1/2 cup coconut cream •1 tsp vanilla extract •1 tbsp apple cider vinegar •1 cup + 2 tbsp almond milk * ½ of cup cane sugar to balance the sweetness Frosting: •1/2 cup vegan butter, softened • 1/2 tsp vanilla extract •1 ½ – 2 cups sifted powdered sugar •2-4 tsp matcha powder •1-2 tbsp. almond milk Method 1. Preheat your oven to 350ºF and line your loaf pan. 2. Add vinegar to the milk and let it curdle (5 mins). Remember to whisk it together before adding it to the batter. 3. Mix the cream and sugar in a mixer. Add the curdled milk & stir. 4. Chuck in the dry ingredients into the mixture. Stir until you get a nice batter. 5. Pour batter into the pan. 6. Bake for 50-55 mins (or wait until it passes the toothpick test). 7. Transfer it onto a serving plate once it is cool. Frosting 1. Soften your butter by letting it sit at room temperature for 1 hr. That way, it doesn’t form any clumps when you combine it with sugar. 2. Beat vanilla and butter in a large mixing bowl. (30 secs) 3. Sift and add ½ cup of sugar one at a time to prevent lumps. Add matcha and beat until you get a light green hue. Add more matcha to intensify its color. 4. Add a spoonful of milk. Adjust the measurement to get the desired consistency.
Small changes can make a HUGE impact - -Repost from @thefitnesschef_ • Over the years, the diet industry has served up extreme nutritional narratives that quickly become societal norms. As a result, Ashley next door has tried low carb, Keto, IF and many more fat loss interventions. Ashley was told that banning carbs & skipping meals defined success, only for misery to cut the diet short after a week. Failure occurs because dieting extremes often fail to communicate the fundamental, un-negotiable scientific necessity required for fat loss - adherence to a calorie deficit. Ashley’s long term adherence to fat loss is more likely to be achieved if enjoyment coexists with the calorie deficit. Despite most dieting solutions being good at selling the success story, they catastrophically neglect the long term enjoyment. When more informed, Ashley’s first realisation was that he/she already had a diet and that eating enjoyed foods must continue. The second, was to create a calorie deficit. He/she now knew that drastic changes were previously miserable and that small changes would be more sustainable. It therefore made sense for Ashley to research lower calorie equivalents of foods he/she already enjoyed. Now he/she made tiny changes, but the resulting caloric reduction would be hugely beneficial to losing fat. And continuation of dietary enjoyment would facilitate long term goal adherence. Over time, Ashley realised just how simple and enjoyable losing fat was. It was only through experience and becoming more educated, that he/she realised previous attempts were foolish. Additionally, it was realised he/she had been victim to the diet industry’s confusing rhetoric, which in the end, aims to capitalise on the same desperate people that they confused in the first place. Over and over. Ashley already had a diet. A few small changes was all that was required to enjoy food and lose fat. Misery was replaced with enjoyment. Confusion with intelligence. Pain with pleasure. Struggle with peace. And hope with certainty. Several nights each week I'll make a big ole' chopped salad of some sort (there are DOZENS of chopped salad recipes here on the site!) to go with dinner, and I always make enough to take for lunches the next day! The crisp-tangy Greek flavors happening in THIS one, are EXCEPTIONAL alongside a juicy BBQ chicken breast, OR makes for a good meal all on it's own - thanks to that protein boost in those little chickpeas! (Makes about 4 servings) Ingredients: 2 medium English cucumbers, chopped 1 large yellow bell pepper, chopped 2 cups cherry or grape tomatoes, halved 1 medium red onion, diced 1 can of chickpeas, drained and rinsed ½ cup pitted Kalamata olives, halved ½ cup crumbled feta cheese Tzatziki dressing: 1/3 cup plain Vegan yogurt 1 Tbsp extra virgin olive oil 2 Tbsps fresh squeezed lemon juice 1 Tbsp fresh lemon zest 1-2 fresh garlic cloves, minced or pressed a small handful of fresh dill, chopped sea salt and fresh ground black pepper to taste, about 1/4 teaspoon each Instructions: To make the dressing: place all the ingredients into a mason jar and shake vigorously to emulsify. Or whisk really well in a small glass bowl. Keep refrigerated until ready to use. In a large bowl, arrange all salad ingredients. Pour dressing over, and gently toss to combine well. Allow flavors to blend for at least 10 minutes before eating. Stays good in the fridge for about 24 hours.
