Fall is here and nothing screams fall more than apple picking. It all seems fine and dandy until you get home and realized you brought over 20lbs of apples. Now what? . I'll be real with you I am far from a baker. After many attempts I have a recipe that worked for us. These muffins came out so moist and scrumptious ,light on the sweetness and big on the Apple flavor! . Apple Muffins . ½ cups of @kingarthurbaking Bread Flour ½ cup of @dominosugar Golden Sugar ½ cup of vegetable oil 1 tsp of Baking Powder 1/2 tsp of @armandhammer Baking Soda ¼ tsp of @mortonsalt ¼ cup of Sour Cream or Buttermilk 1 tsp of @mccormickspice Ground Pumpkin Spice or ground cinnamon 1 tsp of Vanilla Extract ¼ cup of Whole Milk 2 Eggs 2-3 Grated Apples, peeled . Combine dry then wet. Put in muffin tins with muffin paper(you know the drill) . 375° for 24mins YOU'RE WELCOME . DID YOU GO APPLE PICKING THIS YEAR?

Meat and Potatoes takes on a whole new meaning. . I spruced up this "managers choice" chuck steaks. (You know the chewiest meat on the shelf) with some of my homemade Chimichurri sauce. Marinated then grilled. . To make things even better I used the meat as one of the many toppings for my #carneasadafries . My cheese sauce was made with horseradish cheddar cheese and Monterrey Jack from @foodlion . I also made a roasted Poblano pepper crema (I am obsessed). Popped my @lodgecastiron skillet for a quick broil then added a little tomato and guacamole and it was good to go! . Heres what you'll need for my Chimichurri (adjust ingredient to your taste!) Remember recipes are a guide to help you.. . Handful of finely chopped parsley Handful of finely chopped cilantro ¼ cup red wine vinegar ½ cup olive oil 1 lemon 1/4 cup small diced purple onion 4 garlic cloves or ½ head of garlic finely chopped Salt and pepper to taste . . Would your family be down to ditch the pasta night and just dig into some cheesy fries?

With all this Birria talk going around (thanks @a_fat_guy_in_denver 🙄) I remember I had made extra Braised Goat (Birria de Chivo) And froze it so it wouldnt go to waste. ....so guess what I made (insert evil laugh) ? STUFFED QUESADILLAS! Now I still have not given my Birria Recipe since I don't feel it's perfect yet. But that's not the point right now... The point I am getting at is that you can save time and money by making a little extra meat, freeze it and repurpose it weeks later with quesadillas. So here is the question....Do you stuff your quesadillas? Did you know they are an ultimate money saver? I see a way to sneak nutritionally dense veggies, mix texture and flavors. . Here is what I put in my Nachos tonight👇👇👇 . Chorizo Canned beans Avocado Cilantro Purple Onion Tomatoes Black Olives Chipotle Crema( blend crema with adobo sauce and a chipotle) Oaxaca Cheese I use ↪️ @caciqueinc Small secret 🤫 I melt @velveeta with my homemade salsa Diced roasted poblanos (adds smokey goodness!) Last but not least @tostitos Cantina Style chips! . SO, WHAT DO YOU LIKE TO PUT ON YOUR NACHOS?

LOCAL EATS: Milly's Raspados Saturday and Sundays at @copenairmarket . She makes her syrups from scratch and from real fruit! I got the Diablito with real Tamarindo. 😋 She also has freshly pressed cane juice for all you islanders! . Also my husband's favorite joint Steak N Hoagie off Eastway. Sure it's a little on the "lock your doors" side but you won't be disappointed. My husband got the Black and Blue hoagie.

No better way then to start ending the summer with some Sangria. Your pallet will be overwhelmed by the cornucopia of flavors and spirits. . My husband's tried and true recipe is colorful in flavor and a great hit at parties. . You will need to make this recipe the night before. ~ Here's the low down 👇👇(this is a very concentrated recipe..be sure to read to the end) 1- large bottle of @sutterhomewines White Merlot 1- Sliced Granny Smith, Orange, Lime and Lemon 1/2 - box of sliced Strawberries Handful of blueberries 1 Cup - Brandy 1/2 Cup -Grain Alcohol 1/2 Cup- Sugar Combine all ingredients well (make sure the sugar dissolves) Allow to soak over night (THIS IS IMPORTANT) Sangria is traditionally made with fresh fruit that infuses together to make a flavor jubilee. 🍷Once ready to serve - strain half the fruit out with a cheese cloth.(enjoy as a little pregame 😉) . Pour over ice and add a splash of @martinellisco Sparkling Cider for added body. Avoid Grape based sparkles. . . . SALUD! 🥂

MOMMY +ME MEAL ***Can you just hear the salsa music blasting and your torso making those... movimientos?** 💃 ➡️Roba Vieja(old clothes)- Cubano Dish We have a similar one in Mexico called Carne de Calcetín(sock meat) • The Cuban dish uses Sazón and Green Olives and is usually eaten with rice, beans and tostones If available. The Mexican in me ate it with corn tortillas because they are life ... It's easy but does take all day to make Here's the low down: • 2lbs of Beef Brisket (shreds better) 5-10 Green Olives 1 small Yellow onion( 1/4 for broth -slice the rest) 4 garlic cloves. 2whole - 2finely diced 2 teaspoons of cumin seeds / 1teaspoon of ground cumin Salt to taste 1table spoon of paprika Sazón to taste 1 sliced bell pepper (note: the red and orange Belle peppers are sweeter) 2 bay leaves 4 roma tomatoes • 1- In a large pot of water boil beef with salt, 2 cloves, 1/4 onion and bay leaf. Once boiled simmer for 3-5 hours or until it easily shreds with a fork. You might need to continuously fill the pot with water. • 2- Once done put beef in a strainer and allow to cool. Reserve 2 cups of beef broth.(shred beef once cooled) In the same pot and same water boil the tomato until the skin falls off. • 3- In a blender add the onion, garlic and tomato from the broth in the blender then add the 2 cups of brother you reserved. (Throw out the rest or reserve forother dishes like your rice! 🙂) blend until smooth. • 4- In the same pot add oil to the pan and sauteed onion ,bell pepper, garlic until translucent. Add Sazón, cumin and paprika, allow their smell to fill the air. Then add shredded meat and tomato water to the pan on high heat. Boil then add olives. Cover and simmer for 10-15mins . • Serve over rice.

Bulgogi Ground Beef Bowl. Also made speedy kimchi, cucumber side dish and spicy rice cake side dish. Veggies pancakes and lettuce as another side When you start to create your bowl add sesame oil to bottom of you bowl, heat up bowl on fire and add rice to start toasting and creating a crust. Build your bowl while toasting! Korean food isn't complete until you have side dishes....🤷‍♀️ Marinade Sauce (1 pound of beef): ½ cup of Asian pear (puree in food processor or grate in a cheese grater) ¼ cup onion puree 4 cloves of minced garlic( FRESH!) 1 teaspoon minced ginger(FRESH) 1 green onion chopped 2 tbs amino liquid 2 tbs brown sugar (golden sugar) 1 tbs toasted toasted sesame oil Mix all the ingredients in a bowl. Add the ground beef (or sliced beef) and mix well. using your hands works well. You can grill or pan fry right after marinating, but it’s best to keep it in the fridge and let it marinate for at least 30 minutes. Garnish with chives, toasted sesame seedd and red chile peppers

When you can't see a therapist for over a month....and you need an OUTLET HERE YOU GO! . Low Carb Coffee Jelly dessert. Cafe de Olla flavor(Mexican coffee) with Coconut Cream Milk. 1 1/2 packets of unflavored gelatin 2 cups water 3 cinnamon sticks 2 cloves 1 anise star 1 can of coconut milk (choose with or with out cream depending on your fat macro) 1-2table spoons of instant coffee 1-3 syringes of Vanilla Stevia In a tea pot boil water with cinnamon,cloves and anise.(btw this water once done can be served as is or with some milk and sugar. My 4yr old loves it and it taste similar to chair tea with out the spicy note) While boiling activate the gelatin. Add a couple table spoons of water to the powder in the container you'll be using to make the jello. Once it has become gelatinous add the coffee. The more coffee you use the stronger the taste will be. Slowly stir and add hot water(cinnamon water) to gelatin. Stir until fully dissolved. Optional: you can add a few drops of the stevia here) Put in cooler to harden. Once firm. Cut into little squares. Then add to a cup of your choice. Add 1syringe of vanilla liquid stevia to the coconut milk. Then pour desired amount into your cup. Top with whipped cream and cinnamon if you wish. can be served at room temperature or allowed to sit in the refrigerator for a little a little while. The longer the jello sits with the coconut cream the more the coffee flavor will dissolve into the coconut milk. Other options can be all purpose cream (which by the way is very hard to find) you can even do regular milk if you wish or you can do a evaporated milk and condensed milk concoction which would be mixing both of them together blending in a high speed blender and pouring onto your Jello. *****if you do regular milk make sure you sweeten the milk and cut your Jello pieces even smaller to have a boba tea affect...☺️

Our New Norm... . Do I like it? Are we rule breakers? NO . 2020 has taken a toll on our mental health, no one has been spared. Yes, even our littles are affected by little to no socializing with loved ones and friends. . But what it has done is forced our family to become closer, to venture out more and find creative ways to entertain ourselves. And reach out to those who seem to be struggling right now. . What are you doing with your family that you might not have done before this pandemic? How are your kids coping with the change? Do you have any family members who are struggling?

Hey soon to be Mama, . I want to tell you some important things. . You are beautiful. Those stretch marks, that dark line running down your belly and even those dark spot on your cheeks, all of you is beautiful. . I want to tell you not to let the birth experiences of others feed fear into you. Your birth experience will be completely different than your cousins, and your moms, and your friends. . You're stronger than you think. . If every woman's experience was the same....then I wouldn't have had a precipitous birth... I would have repeated the same experience my mother had : a premature baby, while I was put to sleep and they preformed an emergency c section. I would have had high blood pressure and gained 100lbs from water weight. My mother's birth story is different from mine and even different from her sister's experience. . This not only goes for the birth but for the pregnancy and breastfeeding journeys as well. . Try not to stress over others, to compare, to contrast. Your experience is yours, there is no one right way to proceed into motherhood. Your path will be different, and just like snowflakes, even though no two are the same, each one is beautiful.

Sometimes I want to give up, to throw in the towel, to put up my white flag. . Fuck, if I could tell a new mother just one thing, It would be that this is hard, much harder than what the media portrays. . It’s scary to think I am a big part of who you will become. From the words that I say to the actions I make, I shape the beginnings of your life. I shape how you will tackle and conquer the world. . It is heavy and at times it weighs me down. . But as hard as it is, it’s an adventure that I chose. That given the choice, I would choose all over again. You are my breath of fresh air, You are the beating of my heart, the tears in my eyes, the smile on my face. . Every day you make me so proud that I am your mother.

So much on my mind..I turn to cooking when I am stressed. Half the time I don't even eat what I cook since it mentally drains me. . But today I ate...and boy did it fill me up. We are on week 2 of #ketodiet #hflcdiet . We do it because it makes us feel better...but man I miss my Mexican candy. . From left to right -My version of a cowboy burger fried egg, homemade pimento cheese,bacon and 100%beef! . -freeze egg, beef,lettuce and tomato,bacon,charred Anaheim peppers . -SurfNTurf Burger, crab,lettuce and tomato with a little pimento cheese . Juicy burgers is an understatement here. We used mushrooms instead of buns. WHAT DO YOU LIKE ON YOUR BURGERS?

When we consume more processed carbs such as bread, pasta white rice we notice a "tantrum" trend. Bigger emotions and fidgeting. . Our solution is Paleo and since my husband has to loose a bit of weight we figured this would be a big opportunity to get back to healthy lifestyle. . Since a 'Toddler Meals' group asked me to show all Meals for a Paleo child....I will be doing this off and on , on my Instagram.
