Las Vegas Eats Part 2: IN-N-OUT BURGER Some people go to Vegas for super fancy fine dining. I apparently go for gluten-free comfort food. See my last Las Vegas post! When our friends' son told us there was an In-N-Out Burger right off the strip and on the way back to our hotel after the U2 concert, I knew we had to go. Tucked down the Linq Promenade and right before you get to the High Roller Ferris Wheel, there is an In-N-Out. This place was packed but the lines moved quickly. Open until 1:30am on the weekends, add this as a stop to your late-night drinking and gambling shenanigans. In-N-Out takes gluten-free orders seriously and will put allergy on your ticket. My usual order is the protein style burger which means it's wrapped in lettuce. I usually find their fries rather chalky but not this time. My friend's son told me that you can ask for extra crispy fries, which was a game changer. I don't normally eat fast food but this is one fast food chain that I trust. I will stop anytime I see one! This was the perfect late night dinner after the show and less than $40 for all five of us! 🌲Gluten-Free Guide to New York City Holiday Markets now LIVE🌲 It's the time of year when NYC turns into a festive winter wonderland. The city is bustling with holiday cheer. I love seeing all of the twinkling lights, Christmas trees, and decorated storefront windows. I also love to shop for gifts and eat yummy food! The number 1 question this time of year is "where can I find gluten-free food at the holiday markets?" While there aren't tons of gluten-free options, there are some. Las Vegas Eats Part 1: NACHO DADDY When I discovered @nachodaddylv on the @findmeglutenfree app, I knew I wanted to go immediately. A restaurant that revolves around gluten-free nachos is my dream restaurant. Plus the name Nacho Daddy is damn funny and became a running joke all weekend. We wanted to pregame before our first concert and didn't want to spend a ton of money. Conveniently located right under our hotel (Hilton Elara), Nacho Daddy was a perfect choice for take out. We grabbed drinks at Walgreens right around the corner and pigged out on nachos back in our suite. The menu is clearly labeled and the options are abundant. We inhaled our order and my only regret is that we didn't order two dishes. Our friends actually went back the next day and I was jealous. I just got back from a whirlwind 50 hours in Las Vegas. It was the first time my husband and I traveled without my son since he was born and we totally needed a fun getaway. We are exhausted but had the best weekend. The absolute highlight was seeing @u2 LIVE @spherevegas Spoiler alert: IT WAS AMAZING. (Stop looking now if you don't want to see spoiler videos) Nothing prepared me for the sensory explosion of this concert. The show inside the Sphere was unlike anything I had seen in my life. I seriously felt like I was living in the future at this concert. I was like a little kid in complete awe and disbelief of what I was seeing. The graphics were mind-blowing. The sound was perfect. The venue is beyond cool. And then there was U2. I am a fan of their music but my husband and his good friend are MEGA fans. It was so nice to be able to share this moment together. The songs and the overall ecstatic vibe of every single person in that audience was unlike anything I had ever experienced before. Multiple people were crying tears of joy in the audience. Like dream come true kind of tears. If you get an opportunity to see anything at the Sphere, GO! And if you have the opportunity to see U2 at the Sphere, take me with you! I really have no more words to explain the epic-ness of this spectacular show so I will just leave you with some videos. 🙏🏼THANKFUL🙏🏼 Our Thanksgiving feast was small this year. A turkey breast made in the crockpot, cornbread from a mix, cranberry jelly from a can, and some roasted veggies and entirely gluten-free! It was only the three of us but I'm thankful for my little family. Being together, being safe, being fed good food, and being loved was all we needed today. Not everyone in this world is as lucky. And I am thankful for all of you too. It amazes me how a disease could connect me with a supportive community of thousands of people around the world. I will never take that for granted. 7 years ago today. 1000 of miles away from family and friends. Surfers cheering us on. We said "I Do" for the first time on a cliff in Santa Cruz, California. ---- We were in the middle of planning an April 2017 wedding when the election results came in on the night of Nov 8th. I woke up to a flurry of texts from family and friends asking what we were going to do. At the time, my fiance was not a US citizen and the incoming president was a racist especially towards Mexicans. My fiance was here legally on a work visa but we got scared. The future seemed bleak with the incoming buffoon. We were right. I immediately went into research and planning mode. Trying to figure out what we could do legally to get the permanent residency process kicked into high gear. We already knew we were getting married in April so we decided to do the legal part immediately. I looked at the calendar and I chose November 17th as the day because that was my grandmother's birthday. My grandmother was one of the most special people in my life and I knew she would have approved of our decision. Plus, she would have hated that president too. 7 years later... My husband is a US citizen. My husband is a father to our beautiful boy. Have you tried the new @brazi_bites waffles yet? Inspired by content creators who were making these cheese breads in the waffle iron, Brazi Bites took matters into their own hands. They heard their customers loud and clear and rolled out three new types of gluten-free waffles! I was gifted all three flavors a few weeks back and I couldn't wait to dive into each box. I am already a HUGE fan of the original Brazi Bites so I knew these would be good. (Spoiler alert: they are great!) All of these waffles are @certifiedglutenfree and contain at least 5 grams of protein per serving. Oh, and they are delicious! Not too sweet and the perfect snack or breakfast food. When I first posted these to my stories a few people mentioned they used these new waffles to make breakfast sandwiches. That will be my next experiment. Have you tried these yet? My day job comes with some cool perks. Tonight was extra special. I got to tour the soon-to-be-reopened Domino Sugar Factory. If you have looked at the North Brooklyn waterfront, you are sure to have seen this building. Right behind @dominopark is @therefineryatdomino on Kent Ave. This former sugar factory has totally been renovated to be an impressive commercial building. The building is an amazing architectural project. Basically they kept the brick shell and built a new modern building inside. They kept the impressive brick cutouts on the original walls to let natural light and vast views in the new building. We headed to the rooftop just in time for the sunset and the views were stunning. You could see as far south as the Statue of Liberty, all of North Brooklyn, and almost the entire Manhattan skyline. Seeing the city from this view was jaw dropping. My love for NYC was strong tonight, especially with such gorgeous views.
