East Indian Bolings Recipe

Bolings are a sweet coconut semolina cookie that is made at Christmas time in most East Indian Catholic households! All you need to make bolings is coconut(desiccated), semolina(sojee or rava), eggs, sugar, and rose essence. You can use powdered sugar instead of granular sugar so it is easier to melt. Like You can print off the list of ingredients and instructions to follow for making this recipe via the recipe card below (for home use only).

Oxtail Stew: South African Oxtail Potjiekos

South African’s love their meat, so if you are ever wondering what to cook, you know it’s going to be something meaty. And a Potjiekos is a traditional South African stew that literally means ‘small-pot-food’, which is slow-cooked in a cast iron pot over an open flame. To make this Saucy Oxtail stew recipe, all you need is onions, oil, flour, salt and pepper, oxtail, white wine vinegar, brown sugar, carrots, potatoes, and oxtail soup powder. You do not need to add much oil while cooking as the tail meat pieces are quite fatty.

Kwareżimal — Malta’s popular Lenten sweet

Kwareżimal is a popular Lenten sweet — a chewy almond biscuit in an oblong shape, often brown due to cacao powder. Therefore, Kwareżimal’s basic ingredients are flour, sugar, orange rind, and ground almonds but the evolved recipe calls for additional ingredients to make these lovely biscuits even more fragrant. The Offbeat Appetite is a passion project by Claire and Marco who, until recently were chasing palm trees in South East Asia and are now basking in the Mediterranean sun, somewhere between Malta and Italy. In the end, The Offbeat Appetite should not only inspire in the kitchen but also inspire others to get better at making sustainable choices, in the hope of striving to become better citizens every day, one offbeat step at a time.

Hiking the Torrent de Pareis in Majorca, Spain

As Torrent de Pareis is in the Serra de Tramuntana mountain range it is often home to flash floods as it collects a large amount of rainwater that falls on the mountain and funnels it down this narrow valley. If you wish to hike down the valley you start at a place called Escorca, which is on the Ma-10 that connects Pollensa with Soller along the Serra de Tramuntana mountain range. To access this end of the Torrent you would continue on the Ma-10 towards Soller from Escorca and when the road splits in two, follow it to the right onto the Ma-2141 towards Sa Calobra. It is easier to trek up the torrent from Sa Calobra to Escorca but you need at least 2 able, confident climbers to get up and hook the rope at the top for the less able climbers to use.
