Grilled Filet Mignon with Peppercorn Sauce

Grilled filet mignon with peppercorn sauce (AKA steak au poivre) is one of the most luxurious meals you can prepare in less than 30 minutes. I like using kosher salt and course ground black pepper, because both provide a little texture when the crust forms. For a 1 1/2-2″ steak that’s been sitting on the counter for about 30 minutes, it will take about 4 minutes per side over medium-high heat to reach rare to medium rare. <img class="aligncenter size-full wp-image-21133" src="https://girlscangrill.com/wp-content/uploads/2021/02/filet-temp.jpg" alt="thermometer going into side of filet mignon

Grilled Lobster Thermidor

This recipe for Lobster Thermidor is my interpretation of the French classic with a creamy gruyere cheese sauce. There are some haters out there who insist that seafood and cheese don’t mix, but come on…lobster mac and cheese is so a thing and sorry to break it to those folks, but so is lobster Thermidor. You don’t want the meat to cook all the way through, because it’s going to cook more in the final step. Add a sprinkling of grated parmesan cheese and bake/grill for another 10 minutes, until that cheese bubbles.

Grilled Tuna Melt Sandwich

This is a grown-up version of a grilled tuna melt sandwich with a cornichon caper aioli that will knock your socks off. Fast forward to today, and my grilled tuna melt sandwich game is way better and way more delicious. I like to use my Aspire gas grill, instead of charcoal, because the cook is so fast, there’s no need to waste a bunch of coals. Top the grilled tuna melt sandwich with fresh peppery arugula and some fresh celery leaves.

How to Design an Outdoor Kitchen

For accessories that are 30” wide, you’ll need the 36” cabinets, and for accessories that are 19” wide, you’ll need the 24” cabinets. When combined, I had one 5-foot base and one 7-foot base that flank both sides of my standalone Aspire by Hestan gas grill. Be sure to plan out space for your cabinets and grill, plus space to walk around and hang out and room for patio cover columns, if you choose to cover your outdoor kitchen, which I do recommend. Once your cabinets are built and connected and you’ve figured out what material you’re going to finish the sides with, you’ll know how wide the base cabinets will be.
