Cloudy with a chance of meatballs (Gluten-Free Teryaki Meatballs)

What better way to wind down the workday than to cook a recipe from two lovely ladies, Jane of The Heritage Cook and Sara of My Imperfect Kitchen, who have updated their Gluten Free Instant Pot Cookbook (Revised and Expanded Edition), which features over 100 recipes (50 of which are brand new). Once the meatballs were browned (sautéd) on each side, I placed them on the plate to rest while I cooked the remaining meatballs. Once all the meatballs were cooked and resting, I turned off the Pot and carefully removed the pot. Press Sauté and when the mixture starts to bubble, add the slurry to the pot, continuing to stir until the sauce thickens considerably around the meatballs, 3 to 5 minutes.

I love nothing more than when a chef can change my mind about eating vegetarian dishes because the dish is beyond “lick the bowl/plate” good. I’ve seen hundreds of photographs of Buddha Bowls on Instagram – who hasn’t? It’s really an endless choice of options and flavor profiles you can combine and it’s healthy. I have to thank Helene for a wonderful workshop and introducing me to Buddha Bowls!

Seattle - A New Life In Bloow

I have to say it’s been a stressful year (my house is not completely un-packed; e.g. garage is full of storage boxes) with relocating my life across the country, but it’s also been a ton of fun and a growth period for me as well. I’m grateful for the time I spent in Austin, TX and the food community that were really good to me and were the foundation for what is Blinded by the Bite! Austin FOOD + WINE Festival gave me four amazing years of  awesome interviews, delicious food, sumptuous cocktails and fun, fun, fun! Now that I am finally getting settled in and have found my grove with the new job, I will be able to find the time to take a deep dive into the food community and circle back with some of the fabulous contacts I’ve met here at events.
