A simple strawberry jam recipe for a sweet breakfast spread or to add to your favourite scone. In a medium-sized pot, add mashed strawberries, sugar and lemon juice, stir constantly while bringing to the boil. Continue boiling until the mixture reaches 100°C on the jam thermometer and thickens (approximately 30 minutes). Serve immediately on your favourite bread, scones or use as a cake filling.
