My family spends a lot of time at Disney World—the happiest, but certainly not the healthiest, place on earth. So, in an effort to be health conscious on vacation, we would always make a trip to the Orlando Whole Foods and stock up on some prepared foods to bring back to our hotel room mini fridge (this was before I decided to make a regular habit of traveling with our own homemade foods He enjoyed them as a small, filling snack, and even started buying containers at our local Whole Foods to take to work. This is such a flavorful pasta salad recipe and is a lot lighter and more refreshing than more traditional pasta salad recipes.

Pumpkin Spice Latte Donuts

Sure when I was in high school I used to enjoy a frozen Frapuccino every now and then, but those poor excuses for coffee impersonators would hardly do the trick in satisfying my grown up coffee needs. But because of my lifelong love for all things pumpkin and my earlier fondness of their frozen concoctions, years ago I decided to give one of these infamous Pumpkin Spice Lattes a whirl… Instant Addiction. So I’ve broken myself of that habit and drink Starbucks PSLs no more, but this fall I was inspired to create something to honor my once favorite drink—The Pumpkin Spice Latte Donut. The pumpkin cake donut is seasoned with pumpkin pie spice, cinnamon and espresso and slathered in an espresso-cinnamon glaze, giving this donut the perfect ratio of pumpkin to coffee to spice—resulting in a Pumpkin Spice Latte in the form of a donut.

Cinnamon-Maple Pear and Pomegranate Chia Pudding Parfait

and I just received a new bag of delicious Salba chia seeds from Salba Smart , I was inspired to make a chia pudding with traditional fall flavors and seasonal fall produce. The white Salba chia seeds that I used in this recipe have a much lighter flavor than other chia seeds that I’ve tried and they take on the maple and cinnamon flavors and the flavors of the fresh fruit so well. These seeds are also richer in nutrients than ordinary chia seeds, making them great to incorporate into smoothies, breakfasts like this one and other snacks.

Mango Jalapeno Margarita

I like to make fresh margaritas without simple syrup, without sour mix and even without the traditional orange flavored liquor Triple Sec—instead replacing everything with healthier alternatives. You can make a basic margarita with this recipe, or you can spruce it up and add some fresh fruit and spice for a little extra kick. I like to add fresh mango chunks and jalapeno ice cubes to mine and a little cayenne pepper to my salt and sugar rim. If you fill an ice tray with jalapeno slices and water, you can make jalapeno ice cubes that are infused with jalapeno flavor.
